Josiah Cheng wanted to reduce dental decay caused by sugar without completely giving up sweets. He examined whether sugar alcohols, a product from plants such as fruit, can cause tooth decaying oral bacteria and if they could replace sugar in foods. He found sugar alcohols can replace sugars to reduce the severity of dental cavities without impacting the taste of the food.
