WESTTOWN OATMEAL COOKIES
1 cup all purpose flour (or GF flour)
¼ teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon cinnamon
½ teaspoon salt
1 stick (½ cup) softened butter
⅔ cup packed light brown sugar
⅓ cup white granulated sugar
1 large egg (applesauce or egg substitute works, as well)
1 teaspoon vanilla
1 ½ cup oats (or GF oats)
½ cup add in of choice (raisins, chocolate chips, white chocolate chips, dried fruit… the options are endless!)
OPTIONAL for more moist cookies: 1 tablespoon of milk
Preheat the oven to 350 degrees. Combine the first 5 ingredients in a bowl and sit aside. In a mixing bowl, beat butter and both sugars until fluffy. Mix in egg and vanilla. Add the dry mix of first 5 ingredients into the wet mixture and combine all. Mix in oats. Fold in your add-ins of choice. If adding milk, gently mix in now. OPTIONS: flatten dough out onto a greased baking sheet for oatmeal squares OR scoop cookies onto a greased baking sheet at least 2 inches apart from each other. Bake for about 12 minutes or until golden and crispy around the edges. Enjoy!
