The sausage factory was a research based, process oriented exhibition by artists Weronika
Stepien and Stephen Wichuk. It studied the mechanical operations of food production and how this activity is represented in the imagery of industrial films and popular cinema. The dull and dangerous conditions found in the meat processing industrial are echoed in tropes, gags and labour abuses throughout the history of animation.
The central materials in Wichuk's work (balloons and powdered gelatin dessert) bear some historical relation to sausage production. Like sausage casing, balloons were once manufactured from animal intestines. The same gelatin that binds sausages also produces the gastronomic spectacle of Jell-O and the material substrate that allows images to be fixed onto motion picture film. With their Technicolor translucence and otherworldly physics, balloons and gelatin dessert echo (or anticipate) the colour, form and movement idealized in 1930s cel animation.
